Nature:White (yellowish) crystalline or crystalline powder, odorless, slightly flavored. Melting point 218℃(decomposition). Soluble in water (62g
100mL), insoluble in benzene, ether and chloroform, insoluble in ethanol. The Ph of 2% aqueous solution is 6.5 ~ 8.0. It is relatively stable in dry air, and will be slowly oxidized and decomposed after moisture absorption and in aqueous solution, especially in neutral or alkaline solution.
Application: This product acts in much the same way as ascorbic acid and is used as a vitamin C fortifier in various foods and can be used in refreshing beverages and dairy products. It is also used in ham, salami and other foods to maintain blood color and freshness.
